Zlebia

Zlebia

Zlebia or Zlabia is a type of pastry eaten in parts of north-west Africa such as Morocco and Tunisia.

Typical ingredients include flour, 1/2 spoon yeast soup, 1 1/2 spoons of yoghourt soup and sugar. This is then mixed with water and commonly two seeds of cardamone (oil for the crackling). [ [http://www.magicmorocco.com/pastry_makings/zlebia_or_zlabia.html Magicmorocco.com] ]

Kairouan in Tunisia is noted for its Zlebia pastries which are sold at the World Heritage Site.
